This recipe is a variation from one Bernie Millers nieces and one of my best friends. For this version uses maple syrup for the sugar. It is great as an added ingredient to the Whole Wheat Pancake Mix below. It is also wonderful as a simple granola with yogurt and fruit, or add dried fruit, for a healthy snack.
Ingredients Makes about 6 cups
4 Cups Old fashioned oats
1 Cup Pecan pieces
1 Cup Sliced almonds
1/2 Cup Brown sugar, packed
1/4 tsp. Salt
1/8 tsp. Cinnamon
1/3 Cup Vegetable oil
1/3 Cup Maple Syrup
4 tsp. Pure vanilla extract
Directions
In a large bowl, combine all dry ingredients. Add oil and syrup. Spread onto large baking sheets. roast in a 325 degree oven for 40-45 minutes or until golden brown. Transfer to bowl, then add vanilla. Toss to coat. Cool on sheet pan(s). When cooled completely, store in containers or plastic bags. Use cooled granola as an ingredient in Whole Wheat Pancake Mix (below).
