Fresh Sweet Corn & Blueberry Salsa/Salad
This flavorful corn salsa recipe combines fresh sweet corn with blueberries, mint, lime juice and pistachios to produce a knock your socks off appetizer that, when added to fresh greens like arugula, makes a wonderful salad as well.

Ingredients
4
ears of fresh sweet corn
kernels removed (2 cups)
1
cup
blueberries
1
tbsp.
fresh mint
chopped
2
tbsp.
fresh lime juice
1/4
cup
light olive oil
1
tbsp.
honey
1
small poblano pepper
roasted, skin removed, seeded & chopped (1/2 cup)
1/4
cup
roasted pistachios
kosher salt & black pepper
to taste

bag corn tortilla chips like Food Should Taste Good

fresh arugula
washed, optional
Instructions
Combine first 8 ingredients in a medium size bowl.
Season to taste with salt and pepper.
Serve with tortilla chips, or add to fresh greens and serve as a salad.
Notes
For a light, but filling entree, serve salsa with grilled chicken, salmon or pork.
