Morel Egg Strata
This simple recipe is the perfect for breakfast or brunch and a great way to start the day with fresh morels.
Ingredients                      Makes 4 servings
1           Cup             Prepared bourbon buttered morels (see recipe for bourbon buttered morels)
2Â Â Â Â Â Â Â Â Â Â Â Lg. Â Â Â Â Â Â Â Â Â Â Â Â Â Croissants, cut into cubes (about 3 cups)
1           Cup             Fresh asparagus, cut into 1 inch pieces
2Â Â Â Â Â Â Â Â Â Â Â tsp. Â Â Â Â Â Â Â Â Â Â Â Â Fresh parsley, chopped
1           Cup             Shredded cheese of choice (mozzarella, swiss, havarti, cheddar)
5Â Â Â Â Â Â Â Â Â Â Â Ea. Â Â Â Â Â Â Â Â Â Â Â Â Â Large organic eggs
½           Cup           Half & Half
½           tsp.            Sea salt
¼           tsp.            Fresh cracked black pepper
Directions
Preheat oven to 375 degrees. Spray 4 – 12 oz. individual casserole dishes or ramekins with non-stick spray. In a large bowl, whisk eggs and half and half until well blended. Carefully fold in remaining ingredients, being careful not to break up croissant cubes. Spoon mixture into prepared dishes to ¾ full. Place on a sheet pan. Bake for 40-50 minutes or until golden brown on top and eggs are set. Remove from oven and serve immediately.
